In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the butter and sugar until light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla and peppermint extracts.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Divide the dough in half. Leave one half plain, and mix red food coloring into the other half until you achieve your desired color.
Chill both halves of the dough for at least 1 hour.

Roll out each piece of dough between two sheets of parchment paper to about 1/4 inch thickness.
