Instructions
In a medium bowl, whisk together the white chocolate chips, butter, lemon zest, heavy whipping cream, and lemon extract.
In a separate small bowl, combine the powdered sugar and yellow food coloring, if using.
Heat the saucepan over medium heat until the butter melts and the mixture becomes smooth, ensuring it doesn't boil.
Allow the mixture to cool slightly before using a teaspoon to scoop portions of the chocolate mixture.
Roll each scoop into small balls using your hands.
While still soft, coat each truffle in the powdered sugar mixture to ensure they are evenly covered.
Place finished truffles on a tray and refrigerate for at least 30 minutes to set completely.
Serve immediately or store for later enjoyment!
Notes
Keep leftovers refrigerated in an airtight container for up to 2 days. You can also freeze truffles and reheat directly from the freezer.
