Sauté the shrimp with minced garlic in melted butter until pink and cooked through, about 3-4 minutes.
Set aside.
Preparing the Sandwich
Brush each slice of bread with melted butter and sprinkle garlic on top.
Place mozzarella and Parmesan cheese on two slices of bread.
Add the sautéed shrimp on top of the cheese.
Close the sandwich with the other two slices of bread.
Grilling
Grill the sandwiches in the same pan on medium heat, pressing gently until golden brown and crispy on both sides, about 4-5 minutes per side.
Garnish with fresh parsley and serve with a side salad or chips.
Notes
If you have leftovers, store them in an airtight container in the fridge for about 1-2 days. Reheat in a pan on low heat to keep the bread crispy. Make sure not to overcook the shrimp; they should be just pink and tender.
