Ingredients

For the sandwich

  • 4 slices thick bread (sourdough or your choice)
  • 1/2 lb shrimp, peeled and deveined
  • 3 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

Cooking the Shrimp

  • Heat a pan over medium-high heat.
  • Season the shrimp with salt and pepper.
  • Sauté the shrimp with minced garlic in melted butter until pink and cooked through, about 3-4 minutes.
  • Set aside.

Preparing the Sandwich

  • Brush each slice of bread with melted butter and sprinkle garlic on top.
  • Place mozzarella and Parmesan cheese on two slices of bread.
  • Add the sautéed shrimp on top of the cheese.
  • Close the sandwich with the other two slices of bread.

Grilling

  • Grill the sandwiches in the same pan on medium heat, pressing gently until golden brown and crispy on both sides, about 4-5 minutes per side.
  • Garnish with fresh parsley and serve with a side salad or chips.

Notes

If you have leftovers, store them in an airtight container in the fridge for about 1-2 days. Reheat in a pan on low heat to keep the bread crispy. Make sure not to overcook the shrimp; they should be just pink and tender.
