Ingredients

  • 1 lb Ground Beef (80/20) Formed loosely into 6 balls
  • 6 small Flour Tortillas Warmed slightly before assembling
  • 1 teaspoon Salt Divided for seasoning patties
  • 6 slices Cheese (optional) American or cheddar, room temperature

Optional Toppings

  • Shredded Lettuce
  • Diced Tomatoes
  • Thinly Sliced Onion
  • Pickles
  • Salsa
  • Avocado or Guacamole
  • 1/2 cup Mayonnaise (optional) Mixed with 1 tablespoon ketchup and 1 teaspoon hot sauce
  • Cooking Oil or Butter For the skillet, as needed

Instructions

  • Preheat a skillet or griddle over medium-high heat until very hot.
  • Form the ground beef into six loose balls, handling it gently so the meat stays tender. Season each ball lightly with the salt.
  • Add a little oil or a small dab of butter to the hot surface to prevent sticking. Place each ball on the skillet, leaving space between them.
  • Smash each ball immediately with a heavy spatula until very thin and flat.
  • Cook the smashed patties for 3–4 minutes without moving them, allowing a deep brown crust to form. If using cheese, add a slice in the last 30–60 seconds.
  • Flip each patty and cook 2–3 minutes on the other side for medium doneness.
  • Warm the tortillas in another pan or the microwave for 15–20 seconds until pliable and soft.
  • Assemble tacos by placing a smashed burger onto each warmed tortilla. Add desired toppings.
  • Serve immediately while the patties are hot and the tortillas are soft.

Notes

Use 80/20 ground beef for juiciness. Don’t overwork the meat when forming balls. Smash hard and quick for a good sear.
