Ingredients

  • 8 pieces Boneless, skinless chicken breasts
  • 1/2 cup Flour
  • 2 tablespoons Olive oil

Coating/Topping

  • 2 tablespoons Butter
  • 1 cup Chicken broth
  • 1/2 cup Fresh lemon juice
  • 1/4 cup Capers
  • to taste Salt and pepper

  • Chopped parsley for garnish
  • Lemon wedges for serving

Instructions

  • In a medium bowl, whisk together the flour, salt, and pepper.
  • Heat olive oil and butter in a large skillet over medium heat.
  • Dip each chicken breast into the flour mixture, allowing excess to drop off.
  • Cook in batches, turning frequently, until golden brown and cooked through (about 4-5 minutes per side).
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer.
  • Return the chicken to the skillet and cook for an additional 5 minutes, spooning the sauce over the chicken.
  • Garnish with chopped parsley and serve immediately with lemon wedges.

Notes

Store leftovers refrigerated in an airtight container for up to 2 days. Reheat in a skillet over medium heat to regain crispness.
