Ingredients

Crust

  • 1.5 cups Graham cracker crumbs
  • 1/3 cup Sugar
  • 6 tablespoons Unsalted butter, melted

Filling

  • 2 cups Cream cheese, softened
  • 3/4 cup Granulated sugar
  • 2 tablespoons Lemon zest
  • 1/4 cup Lemon juice
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 1 cup Fresh strawberries, sliced
  • 1/2 cup Lemon curd
  • 2 tablespoons Water
  • 1 cup Whipped cream

Garnish

  • Fresh strawberries, halved
  • Lemon zest, for garnish

Instructions

  • Preheat the oven to 350°F (175°C).
  • Mix graham cracker crumbs, sugar, and melted butter together.
  • Press the mixture into the bottom of a 9-inch springform pan.
  • Bake for 8 minutes.
  • Reduce the oven temperature to 325°F (163°C).
  • Beat cream cheese, sugar, lemon zest, lemon juice, and vanilla extract until smooth.
  • Add eggs one at a time, beating just until blended.
  • Gently fold in strawberry slices.
  • Pour the mixture over the crust and bake for 35-40 minutes, or until the center is almost set.
  • Cool completely on a wire rack.
  • For the glaze, heat lemon curd with water in a saucepan over low heat until pourable.
  • Spoon the glaze over the cooled cheesecake.
  • Chill the cheesecake for at least 4 hours.
  • Before serving, decorate with whipped cream, fresh strawberry halves, and a sprinkle of lemon zest.

Notes

Store any leftovers in the refrigerator. Cover it well with plastic wrap or keep it in an airtight container. It will stay fresh for up to 5 days.
