Ingredients

Crust

  • 2 cups Graham cracker crumbs Finely crushed
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter Melted

Filling

  • 16 oz Cream cheese Softened to room temperature
  • 1 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1 cup Heavy whipping cream Cold
  • 1 cup Fresh strawberries Sliced
  • Optional Additional strawberries For garnish, sliced whole or halved

Instructions

  • Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix well and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  • In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Use an electric mixer on medium speed to avoid lumps, scraping the sides of the bowl once or twice.
  • In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture until fully incorporated. Fold gently with a spatula to keep the mixture airy.
  • Layer the sliced strawberries over the cooled crust, then pour the cream cheese mixture on top and smooth it out. Arrange the strawberries evenly so each slice gets a bit of berry.
  • Refrigerate for at least 4 hours or overnight to set. Chilling overnight makes slicing cleaner and the texture silkier.

Notes

Store covered in the refrigerator for up to 3 days. This cheesecake can be frozen for up to 1 month. Wrap tightly in plastic wrap and then in foil.
