In a medium bowl, combine white grape juice, granulated sugar, and hulled and sliced strawberries. Heat the mixture in a saucepan over medium heat until the sugar dissolves and the strawberries soften slightly.
Allow the mixture to simmer for about 10 minutes. Then, remove from heat and let the flavors meld for an additional 10 minutes.
Strain the syrup to remove the strawberry pieces, returning the syrup to the saucepan.
On low heat, add in the acai powder, green coffee extract, passion fruit powder, and lemon juice. Whisk together until all ingredients are fully blended into a smooth syrup.
Decant the syrup into a mason jar or container and refrigerate until chilled.
To serve, in a shaker, combine a portion of the chilled syrup, some freeze dried strawberries, and half a cup of water with ice.
Shake until thoroughly mixed and pour over ice in your favorite glass. Garnish with more freeze dried strawberries if desired.
Notes
Keep leftovers refrigerated in an airtight container for up to 3 days. Reheat the syrup in a saucepan over low heat to regain its flavor before serving.
