Ingredients

Main Ingredients

  • 3 cups cooked rice preferably leftover rice
  • 2 pieces eggs
  • 1 cup mixed vegetables (carrots, peas, corn)

Coating/Topping

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil

Optional Serving Suggestions

  • chopped green onions for garnish
  • soy sauce or sweet chili sauce for serving

Instructions

  • In a medium bowl, whisk together the eggs.
  • In a separate small bowl, combine the soy sauce and sesame oil.
  • Heat a large pan or wok over medium heat.
  • Add a dash of oil to the pan.
  • Add the mixed vegetables and stir-fry for 2-3 minutes until heated through.
  • Push the vegetables to the side and pour the beaten eggs into the pan. Scramble until fully cooked.
  • Add the cooked rice to the pan and mix everything together.
  • Pour in the soy sauce mixture and stir well to combine. Season with salt and pepper to taste.
  • Add the chopped green onions and stir until everything is well mixed.
  • Serve immediately with additional toppings if desired.

Notes

Keep leftovers refrigerated in an airtight container for up to 2 days. Reheat in a pan or microwave to warm through before serving.
