  • 4 pieces boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded

Coating/Topping

  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, mix the chopped roasted red peppers, spinach, mozzarella cheese, salt, and pepper.
  • Take one chicken breast and cut a pocket into the side, being careful not to cut all the way through.
  • Stuff the chicken breast generously with the filling mixture.
  • Heat olive oil in a large skillet over medium heat.
  • Sear the stuffed chicken breast for about 3-4 minutes on each side, until golden brown.
  • Transfer the chicken to a baking dish and bake for 25-30 minutes until the chicken is cooked through and the cheese is melted.
  • Serve immediately with your favorite toppings.

Notes

Keep leftovers refrigerated in an airtight container for up to 3 days. Reheat in a toaster oven or skillet for best results.
