  • 19 ounces cheese tortellini frozen or fresh
  • 1 tablespoon olive oil
  • 1 onion sliced
  • 1 green bell pepper sliced
  • 1 pound beef thinly sliced
  • 2 cups provolone cheese shredded
  • Salt to taste
  • Pepper to taste

Instructions

  • In a medium pot, cook the cheese tortellini according to package instructions; drain and set aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the sliced onion and bell pepper, sautéing until they are tender and fragrant.
  • Add the thinly sliced beef to the skillet and cook until it’s browned.
  • Stir in the cooked tortellini, salt, and pepper, mixing everything evenly.
  • Add the shredded provolone cheese on top and cover the skillet until the cheese is melted.
  • Serve hot, garnished with fresh parsley or crushed red pepper flakes if desired.

Notes

Keep leftovers refrigerated in an airtight container for up to 3 days. Reheat in a skillet over medium heat, adding a splash of water if needed to regain moisture.
