  • 1 box (3 oz) orange Jell-O
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) Cool Whip, thawed
  • 1 can (14 oz) mandarin oranges, drained
  • 2 cups cold milk for preparing the instant vanilla pudding

Instructions

  • In a large mixing bowl, pour in the orange Jell-O powder and add 1 cup of boiling water. Stir continuously until the Jell-O is fully dissolved and the liquid is clear.
  • Carefully stir in the 1/2 cup of cold water to help cool the mixture and balance the texture.
  • In a separate medium bowl, whisk the instant vanilla pudding mix with 2 cups of cold milk according to the pudding package instructions until thickened (usually about 2 minutes of whisking).
  • Allow the pudding to set for a minute, then gently fold the prepared pudding into the cooled Jell-O mixture until combined and smooth. Use a rubber spatula to avoid overworking it.
  • Fold in the thawed Cool Whip gently, stirring until the mixture is uniformly creamy and light in color.
  • Stir in the drained mandarin oranges, folding carefully to distribute fruit without smashing the segments.
  • Cover the bowl with plastic wrap or transfer to a serving dish, then refrigerate for at least 2 hours to allow the salad to firm up and the flavors to meld. Serve chilled.

Notes

Chill before serving for at least 2 hours to improve flavor melding. Use well-drained mandarins to avoid thinning the salad.
