No-Bake Cottage Cheese Brownie Batter Protein Bites
Creamy, chocolatey, and wildly satisfying, these protein bites taste like brownie batter but pack a protein punch thanks to cottage cheese and chocolate protein powder.
1/2cupCottage CheeseWell-drained if very watery, room temperature for easier blending.
2tbspCocoa PowderUnsweetened, sifted if lumpy.
1/4cupAlmond FlourFinely ground.
1scoopChocolate Protein PowderAny brand, scoop level to preference.
2tbspMaple SyrupPure maple syrup for best flavor.
1/4cupMini Chocolate ChipsUse dairy-free if needed.
1tbspPeanut ButterOptional, smooth, room temperature or slightly warmed to loosen.
Instructions
In a large mixing bowl, combine the cottage cheese, cocoa powder, almond flour, chocolate protein powder, maple syrup, and mini chocolate chips. Use a sturdy spoon or spatula to mix.
Stir the mixture until fully blended, creating a smooth, brownie-like batter. Scrape the sides and press any lumps against the side of the bowl to break them up.
Mix in the peanut butter if desired for an extra nutty flavor. Stir until evenly distributed.
Roll the mixture into small bite-sized balls about 1 inch in diameter. Press firmly so the bites hold together.
Place the bites on a parchment-lined plate or baking sheet with a little space between each.
Refrigerate for at least 30 minutes until firm. For a firmer texture, chill for up to 2 hours.
