Instructions
Prepare the apple filling: In a medium skillet, melt 2 tablespoons butter over medium heat. Add 1 1/2 cups peeled, finely diced apples and 2 tablespoons brown sugar. Cook, stirring occasionally, for 6–8 minutes until the apples are tender and syrupy. Remove from heat and let cool slightly.
Make the dry mix: In a medium bowl, whisk together 1 cup all-purpose flour, 1 tablespoon baking powder, 1/4 teaspoon salt, 1/2 teaspoon cinnamon, and 1/4 cup granulated sugar until evenly combined.
Make the wet mix: In another bowl, whisk 3/4 cup milk, 1 large egg, and 1 teaspoon vanilla extract until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix. Batter should be thick but spoonable.
Preheat and grease waffle maker: Heat your mini waffle maker according to the manufacturer’s instructions and lightly grease with nonstick spray or a brush of oil.
Cook the mini waffles: Spoon batter into the waffle pockets to fill about two-thirds full. Add a small spoonful (about 1 teaspoon) of the apple filling into the center of each waffle, then cover with a little more batter if there is room. Close and cook until golden brown and set, about 2–3 minutes per batch depending on your machine.
Shape and fry: On a cutting board, use a donut cutter or two round cutters to cut the cooked waffles into donut shapes. Heat about 1/2 inch of vegetable oil in a heavy skillet over medium heat until it reaches 350°F (or test with a small piece of batter — it should sizzle and brown within 20–30 seconds). Fry the waffle donuts in batches for 20–40 seconds per side until golden and crisp. Drain on paper towels.
