2cupsFinely crushed shortbread cookies or vanilla biscuitsCrush in a zip-top bag with a rolling pin or pulse in a food processor.
1/2cupSweetened condensed milkRoom temperature is fine.
1teaspoonVanilla extractPure vanilla for best flavor.
Instructions
Line an 8×8-inch baking dish with parchment paper, leaving a small overhang to make removal easy.
Place the crushed shortbread cookies or vanilla biscuits in a large mixing bowl. Make sure the crumbs are fine but not turned into dust for a slightly textured bite.
Pour the sweetened condensed milk and vanilla extract over the cookie crumbs.
Mix with a spatula or clean hands until the crumbs are evenly coated and the mixture clumps together. If it feels too dry, add a teaspoon more condensed milk at a time until it holds.
Transfer the mixture into the lined baking dish. Using your hands or the back of a spatula, press firmly and evenly into the pan to form a compact layer about 1/2 inch thick.
Refrigerate the pan for about 1 to 2 hours, or until the bars are fully set and firm to the touch.
Once set, lift the parchment paper from the dish, place on a cutting board, and cut into squares or bars with a sharp knife. Serve chilled or at cool room temperature.
Notes
Store the bars in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze for up to 2 months.
