Ingredients

Cheesecake Base

  • 1 cup Graham cracker crumbs
  • 1/4 cup Unsalted butter, melted

Cheesecake Filling

  • 8 oz Cream cheese At room temperature
  • 1 cup Powdered sugar
  • 1 cup Heavy cream Whipped until stiff peaks form
  • 1 cup Dark chocolate, melted Use high-quality chocolate for best flavor
  • 1 cup Fresh raspberries Plus extra for garnish

Toppings

  • 1 cup Chocolate ganache For drizzling on top

Fresh berries

  • to taste Fresh berries for garnish

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  • In another bowl, beat cream cheese and powdered sugar until smooth.
  • Blend in the melted chocolate and mix until well combined.
  • In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the chocolate mixture.
  • Add half of the raspberries and fold them in.
  • Pour the cheesecake filling over the crust and smooth the top.
  • Refrigerate for at least 4 hours or until set.
