Ingredients

Main Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large egg
  • 1 cup iced water or club soda

Coating/Topping

  • 1 cup breadcrumbs
  • 1/2 cup powdered sugar

Instructions

  • In a medium bowl, whisk together the flour, cornmeal, baking powder, salt, and pepper.
  • In a separate small bowl, combine the breadcrumbs and powdered sugar for the coating.
  • Heat oil in a deep skillet or frying pan over medium heat.
  • Dip pieces of seafood or chicken into the batter mixture, allowing excess to drip off.
  • Cook in batches, turning frequently, until golden brown (about 3-4 minutes). Add more oil between batches if needed.
  • While still warm, coat each piece in the coating mixture.
  • Serve immediately with your favorite toppings.

Notes

Keep leftovers refrigerated in an airtight container for up to 2 days. Reheat in a toaster oven or skillet to regain crispness.
