Instructions
In a medium bowl, whisk together the flour, cornmeal, baking powder, salt, and pepper.
In a separate small bowl, combine the breadcrumbs and powdered sugar for the coating.
Heat oil in a deep skillet or frying pan over medium heat.
Dip pieces of seafood or chicken into the batter mixture, allowing excess to drip off.
Cook in batches, turning frequently, until golden brown (about 3-4 minutes). Add more oil between batches if needed.
While still warm, coat each piece in the coating mixture.
Serve immediately with your favorite toppings.
Notes
Keep leftovers refrigerated in an airtight container for up to 2 days. Reheat in a toaster oven or skillet to regain crispness.
