  • 12 oz Penne or Rotini Pasta
  • 1 lb Ground Beef
  • 1 tbsp Olive Oil
  • 1/2 cup Yellow Onion, finely diced
  • 1/2 cup Dill Pickles, chopped (optional)
  • 2 cloves Garlic, minced
  • 2 cups Heavy Cream
  • 1 1/2 cups Shredded Cheddar Cheese

Instructions

  • Bring a large pot of salted water to a boil. Add penne or rotini and cook according to package instructions until al dente (usually 8–10 minutes). Drain and set aside, reserving a half cup of pasta water in case the sauce needs thinning.
  • While the pasta cooks, heat olive oil in a large skillet over medium heat. Add finely diced yellow onion and minced garlic. Sauté for 2–3 minutes until the onion is softened and fragrant.
  • Add ground beef to the skillet. Break it up with a spatula and cook until browned and cooked through, about 6–8 minutes. Season with salt and freshly ground black pepper to taste. Drain any excess fat from the skillet.
  • Reduce heat to medium-low and pour in heavy cream, stirring to combine. Let the cream come to a gentle simmer for 2–3 minutes, stirring occasionally so it doesn’t scorch.
  • Gradually stir in shredded cheddar cheese, mixing until the cheese is fully melted and the sauce is smooth. Taste and adjust seasoning with salt and pepper.
  • Add the cooked pasta to the skillet and toss until every piece is coated in the cheesy sauce. If the mixture seems too thick, add a splash of the reserved pasta water to loosen the sauce.
  • Stir in chopped dill pickles if using, for a burst of tang and crunch that brightens the dish.
  • Serve hot, garnish with extra shredded cheddar or chopped green onions if desired, and enjoy the cheesy, creamy goodness.

Notes

For extra crunch and smoky flavor, crisp some bacon and sprinkle on top before serving.
