  • 2 cups Leftover Mashed Potatoes Cold or room temperature
  • 1 cup Shredded Cheddar Cheese Sharp or medium
  • 1/2 cup Shredded Mozzarella Cheese

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  • In a mixing bowl, combine the leftover mashed potatoes, shredded cheddar cheese, and shredded mozzarella cheese. Mix until the cheeses are evenly distributed and the mixture is slightly sticky.
  • Using clean, slightly damp hands, scoop about 1 to 1.5 tablespoons of mixture and roll into small puffs or balls. Place them on the prepared baking sheet, leaving about 1/2 inch between each puff.
  • Bake in the preheated oven for about 15–20 minutes, or until the exterior is golden and crispy and the cheese inside has started to melt.
  • Remove from the oven and let the puffs cool slightly on the baking sheet for 3–5 minutes before serving.

Notes

For extra crispiness, lightly brush or spray the puffs with oil before baking. Serve with dipping sauces for variety.
