Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine the halved baby potatoes, olive oil, honey, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
Spread the seasoned potatoes onto a lined baking sheet in a single layer.
Scatter the chopped bacon over the potatoes ensuring even distribution.
Roast in the preheated oven for 35 to 40 minutes, flipping halfway through.
Sprinkle fresh thyme and Parmesan cheese (if using) over the potatoes and return to the oven for another 5 minutes.
Remove from the oven, garnish with chopped fresh parsley, and serve hot.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in a 375°F (190°C) oven for 10–15 minutes.
