  • 2 lbs Baby Potatoes, halved
  • 6 slices Bacon, chopped
  • 3 tablespoons Olive Oil
  • 2 tablespoons Honey
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 tablespoon Fresh Thyme Leaves (or 1 teaspoon dried thyme)
  • 1/4 cup Grated Parmesan Cheese (optional)
  • 1 tablespoon Chopped Fresh Parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine the halved baby potatoes, olive oil, honey, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
  • Spread the seasoned potatoes onto a lined baking sheet in a single layer.
  • Scatter the chopped bacon over the potatoes ensuring even distribution.
  • Roast in the preheated oven for 35 to 40 minutes, flipping halfway through.
  • Sprinkle fresh thyme and Parmesan cheese (if using) over the potatoes and return to the oven for another 5 minutes.
  • Remove from the oven, garnish with chopped fresh parsley, and serve hot.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a 375°F (190°C) oven for 10–15 minutes.
