In a medium bowl, combine chicken cubes, olive oil, paprika, garlic powder, salt, and black pepper. Mix well so each cube is evenly coated. Let sit for 5 minutes if you have time.
Preheat the grill or grill pan to medium-high heat. Brush with a touch of oil to prevent sticking.
Place the chicken cubes on the grill in a single layer. Cook for about 5–7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/74°C).
While the chicken is grilling, prepare the creamy garlic sauce. Combine Greek yogurt, mayonnaise, minced garlic, and lemon juice in a bowl. Whisk until smooth and season with salt and pepper to taste.
Once the chicken is cooked, transfer to a serving plate and drizzle the creamy garlic sauce over the top. Garnish with chopped parsley if desired and serve hot.
