Instructions
In a medium bowl, whisk together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
In a separate small bowl, whip the heavy cream until stiff peaks form.
Carefully fold the whipped cream into the cream cheese mixture until fully combined.
Heat a little butter or oil in a skillet over medium heat.
Take taco-shaped waffle cones or mini taco shells and dip them into the Fruity Pebbles, pressing gently to coat.
Fill each taco shell with the cheesecake mixture, then return to the skillet.
Cook in batches, turning frequently until golden brown (about 2-3 minutes).
While still warm, coat each piece in a mixture of Fruity Pebbles. Serve immediately with your favorite toppings.
Notes
Keep leftovers refrigerated in an airtight container for up to 2 days. Reheat in a toaster oven or skillet to regain crispness.
