  • 8 oz cream cheese softened to room temperature
  • 1 cup shredded cheddar cheese or shredded mozzarella for a milder melt
  • 1/2 cup cooked bacon finely chopped (about 3-4 slices cooked crisp)
  • 40-50 pieces Doritos any savory flavor, choose thicker chips to prevent breaking
  • 2 tablespoons chopped green onions optional, for freshness
  • 1 teaspoon smoked paprika or chili powder, optional for added depth
  • 1/2 teaspoon black pepper optional
  • to taste hot sauce or ranch for serving, optional

Instructions

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese (or mozzarella), and the finely chopped cooked bacon. Make sure the cream cheese is room temperature so it blends easily.
  • Mix until well blended and smooth. Use a spatula or electric hand mixer on low for about 30 seconds to 1 minute if you want an extra-smooth texture. Stir in green onions and smoked paprika now if using.
  • Take each Dorito carefully and scoop or pipe a small dollop of the cheese and bacon mixture into the chip’s cavity. Aim for about 1 teaspoon per chip so the chip doesn’t break. If chips are fragile, fill fewer at a time or serve the mixture as a dip alongside the chips.
  • Arrange stuffed Doritos on a serving platter, sprinkle an extra pinch of cheddar or paprika on top for presentation, and serve immediately with hot sauce or ranch on the side for dipping.

Notes

Store leftover filling in an airtight container in the refrigerator for up to 3 days. Do not store already-stuffed chips in the fridge — they will become soggy.
