  • 1 cup Cottage Cheese Preferably low-fat or fat-free, smooth or blended if needed.
  • 1/2 cup Almond Flour Packed slightly if measuring by spoon.
  • 1/4 cup Honey or Maple Syrup Room temperature.
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Oat Flour Or finely ground oats.
  • 1 pinch Salt
  • to taste Optional Mix-ins Dark chocolate chips, chopped nuts, dried fruit, shredded coconut, or cinnamon.

Instructions

  • Prepare the cottage cheese by ensuring it is smooth and creamy. If your cottage cheese is lumpy, pulse it briefly in a food processor or blender until mostly smooth, about 10–20 seconds.
  • In a mixing bowl, combine cottage cheese, almond flour, honey or maple syrup, vanilla extract, oat flour, and salt. Mix until a dough-like texture forms.
  • Shape the dough into balls using a small cookie scoop or your hands and place them on a baking sheet lined with parchment paper.
  • Chill the dough bites for at least an hour to set before serving. For firmer bites, refrigerate for 2 hours.

Notes

Store the chilled bites in an airtight container in the fridge for up to 5 days. Freeze on a tray first, then transfer to a freezer-safe bag for up to 3 months.
