Brownie Base

  • 1/2 cup Unsalted Butter, melted
  • 1 cup Granulated Sugar
  • 2 large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 1/2 cup All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt

Cookie Dough Topping

  • 1 cup Chocolate Chips

  • 1/4 cup Brown Sugar

Instructions

  • Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  • In a mixing bowl, combine the melted butter and granulated sugar. Mix until well combined and slightly glossy.

  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  • Fold in the chocolate chips.
  • Spoon the brownie batter into the mini muffin tin, filling each cup about 2/3 full.
  • In a separate bowl, mix together the mini chocolate chips, brown sugar, and a little bit of the leftover brownie batter to form the cookie dough.
  • Add small dollops of the cookie dough on top of each brownie bite in the muffin tin.
  • Bake for 10-12 minutes or until the edges are set but the centers are still slightly underbaked.
  • Let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
