  • 8 ounces lo mein noodles
  • 1 tablespoon canola oil
  • 2 cups cooked chicken, shredded
  • 1 cup mixed vegetables (e.g., bell peppers, carrots, snow peas)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil

Instructions

  • In a medium bowl, whisk together the soy sauce, oyster sauce, and sesame oil.
  • Cook the lo mein noodles according to package instructions, then drain and set aside.
  • In a large skillet or wok, heat the canola oil over medium-high heat.
  • Add the minced garlic to the pan and sauté for about 30 seconds until fragrant.
  • Add the mixed vegetables and stir-fry for about 3-5 minutes, until tender.
  • Stir in the shredded chicken and heat through, about 2 minutes.
  • Pour the sauce mixture into the skillet and toss to coat all ingredients evenly.
  • Finally, add the lo mein noodles and gently toss to combine until everything is heated through.
  • Serve immediately, garnished with sliced green onions.

Notes

Keep leftovers refrigerated in an airtight container for up to 3 days. Reheat in a skillet over medium heat, adding a splash of water if needed to prevent sticking.
